Ingredients

  • Walnuts: 300 g
  • Cinnamon: 3 g
  • Butter: 225 g
  • Phyllo dough: 1 pkg
  • Water: 235 g
  • Sugar: 200 g
  • Honey: 170 g
  • Vanilla: 5 g

Method

Make the pastry

1.

Preheate the oven to 350 ºF and grease a 9x13 pan.

Chop walnuts and mix with cinnamon.

  • walnuts: 300 g
  • cinnamon: 3 g

Melt butter.

  • butter: 225 g

Layer 2 sheets phyllo dough and butter. After 4 cycles, start adding 25 grams of nuts to each layer. Repeat 12 times. Leave the remaining sheets loose on top (should be about 8). There are 40 sheets in total -> (2 * 4) + (12 * 2) + 8

Cut into 3 * 5, then cut diagonals. There should be 30 pieces total.

Make the syrup

1.

Boil water with sugar for a few minutes.

  • water: 235 g
  • sugar: 200 g
2.

Add honey and vanilla.

  • honey: 170 g
  • vanilla: 5 g
3.

Boil until the temperature gets to very early thread stage ( 223 °F at sea level minus 1 °F for every 500 ft. in elevation).

Assemble

1.

Immediately when the pastry finishes, pour the syrup evenly across the pan.
